KABUKI RAW is the hotel's signature restaurant and is managed by the Kabuki Group, world leader in Japanese cooking with five restaurants and a total of three Michelin stars.
Kabuki cuisine is known for its pure orthodox Japanese dishes along with others that have emerged as a result of Japanese and Mediterranean influences. The use of prime raw materials and the simplicity with which the food is elaborated offers a unique flavour.
KABUKI RAW, like the Japanese theatre after which it is named, is staged in a unique setting which permits guests to view chef Rafael Carrasco at work in the Kabuki kitchen and it is here, using only the highest quality raw materials and outstanding seafood from
sustainable fisheries in the Straits, organic produce from our vegetable garden in addition to other featured produce typical of the Spanish cuisine, where his most emblematic dishes are served up together with others specifically created for FINCA CORTESIN.
Rafael Carrasco, Chef at KABUKI RAW, is an apprentice of Ricardo Sanz and, before joining Finca Cortesín, he worked as a chef for Abama Kabuki, a Michelin-star restaurant and Director of I+D for the Kabuki Group.
